Default Wheel upgrades.

I plan to purchase a set of wheels for when i pickup my 07 C6. They are Z06 reps black with machined face.

With these offsets would i have to worry about wheels sticking out?

Front

Rear

?

If they do, just end up going with the stock c6 wheel sizes.

No they will not stick out,normally c-6 rims are 8.5 fronts and 10.0 rears.
The z06 fronts are 9.5 and the rears are 12.0.
The only reason you would stick out is if you went over size tires,near 290 or wider.

Another question. I should be purchasing my wheels within the next few months. Im basically setting myself up for autox'ing and taking it to the track. For the mean time ive been told my stock tires tires will fit fine on the 18x9.5 and 19x11 wheels until i upgrade(current tires are still new), but with the wheel options, 18x9.5 and 19x1, will the Z06 brake conversion kit fit with these? If not im gonna cry.

The rear dimensions won't interfer with the brakes, so you'll be fine with the ZO6 brake upgrade...and if you want to get rid of your stock C6 brakes and rotors, I'd love to take them off your hands once you upgrade to the massive ZO6ers.
